The best part of summer in Southern Ontario is hands down peach and blueberry season. I make every excuse to include peaches in main courses, and here is one of my favorite renditions. Super easy to make alongside burgers or baked fish on a summer evening. Enjoy!!

  1. Slice up San Marzano tomatoes.

  2. Roast ripe peaches in slices in the oven for ~20 minutes.

  3. Slice up buffalo mozzarella.

  4. Arrange as shown.

  5. LOTS of salt and pepper and basil if desired.
