For the cupcakes:

½ teaspoon of baking soda

¼ cup of room temperature buttermilk

1 stick of butter

3 heaping tablespoons of cocoa

½ cup of water

1 cup of sugar

5 tablespoons of cocoa

1 lb. of icing sugar

1 vanilla bean

A gem found on stumble upon, a net-browsing social media site that directs you to avant-garde websites relating to your chosen interests. For a curious cook like me, this website is extremely useful for finding other culinary creators like me on the internet. 

Ming makes cupcakes is a beautifully-presented blog with recipes for various different cupcakes including Eton’s Mess Cupcakes and Espresso Fudge Cupcakes. We decided, however, to create a classic chocolate delight. 

What I loved about them was that the recipe was different from that of which Iwas used to. Usually, I cream the butter and sugar together and then mix in the egg and finally the dry ingredients. This time, I was instructed to melt the cocoa powder (Cailler chocolate I might add…) and butter together, creating a sort of caramel-like flavour. We also used whole vanilla beans for the frosting and the cupcakes which added another level of flavour. 

Sis’s Chocolate Cupcakes with Chocolate Frosting 

In a small bowl, dissolve ½ teaspoon of baking soda in ¼ cup of room temperature buttermilk. In a saucepan, melt 1 stick of butter with 3 heaping tablespoons of cocoa at low temperature. When smooth, add ½ cup of water. In a separate bowl, sift together 1 cup of sugar, 1 cup of flour, and ¼ teaspoon of salt. Add cocoa mixture and 1 egg and mix at low speed. Add buttermilk mixture and the insides of one vanilla bean and beat until smooth. Bake at 350 for 20 minutes or until inserted toothpick comes out clean. 

In a saucepan, melt 1 stick of butter at low temperature. In a separate bowl, mix together 5 tablespoons of cocoa and 1 lb. of icing sugar. Add 1 stick of melted butter, 1 vanilla bean, and ¼ cup milk, and beat at low speed until mixed. Frost cupcakes generously.
